So I’ve been on a pumpkin kick so much lately, that pumpkin is coming out of my ears.
Well not yet, at least. (BTW, Pumpkins are already on sale at Walmart, woo hoo!)
My husband seems to think I will get sick of it soon, but we’ll see.
I had some left over pumpkin puree from another recipe I made yesterday, so I had to find a way to use it up before it went bad. Here is what I came up with.
1 pkg. small Instant Vanilla Pudding mix
1 cup Pumpkin Puree
1 cup Cool Whip
3/4 cup Milk
1/2 tsp Pumpkin Pie Spice
Mix the pudding, milk, pumpkin and spice together in a large bowl.
Fold in the Cool Whip.
To serve, you can top with some more cool whip or whipped cream.
I have to say, this was a big hit in our house last night. You could even use this mixture to make a trifle bowl with some cake. Or even serve it with some fruit, as a fruit dip. We ate ours with some graham crackers.
My husband said it tasted just like pumpkin pie. YUM!
