Creamy Crock-pot Potato Soup {Recipe}

Creamy potato soup is my absolute favorite soup. I could eat it during the hot summer {call me crazy!} and most importantly – during those cold winters. What’s even better is making a big batch of it in the crock-pot to freeze later on. I like tossing in random vegetables that need to be eaten {think celery, onions, broccoli and carrots} as well as cooked bacon, lunch-meat and chicken sausage. Makes for quick easy meals when you have no energy or time. And that picky eater of mine? He likes potato soup too and that makes for a happy mama!

Creamy Crock-pot Potato Soup {Recipe}

Creamy Crock-pot Potato Soup

6 Medium Russet Potatoes {cleaned, peeled and diced}
4 cups of chicken broth {I prefer low sodium}
1/2 teaspoon pepper
Pinch of red pepper
2 cups whole milk
1/2 cup all purpose flour
1 cup sour cream
1 cup shredded cheese
3 green onions

Optional – Cooked bacon or sausage {chopped} Vegetables you may on hand. {Frozen corn, broccoli, cauliflower, carrots, celery}

* Throw first four ingredients in the crockpot. Cook for 6-8 hours on low.
* In a medium bowl – whisk together your milk, flour and sour cream. Add to crock-pot and stir in optional veggies or meat. Cook for 30 minutes. Stir in cheese can serve. Garnish with more cheese or green onions.
